I would probably go with something like the Manfrotto Nitrotech 608 fluid head, which is my current top pick. That will be a great fluid head that should last quite a while and grow with you as needs may change.
You can pair that with a tripod of your choosing. I have some recommendations here, but only one or two would probably fit your budget and situation well. Whatever you get, be sure to get a 100mm or 75mm bowl to flat base adapter if the tripod has a bowl mount, since the Nitrotech heads have a flat base.
