Yes and no. If you use an ATEM Mini (any model) then your stream will only be 1080p as well. While 4K streaming is available and possible, it's not very common and most viewers don't get the benefits of it. But it is something that will continue to get more popular over the coming years, so it's not a bad idea to invest in 4K now so you have it when it's time to make the switch. So the 4K output is more important for the future than the present, since you mentioned you want something for the next 5 years.
(some streams I look up to in quality wise is upperroom and Jesus image and I've seen they use blackmagic as well. in the future when we are in the position to buy another camera to have on the alter facing the worship should we go with the same one your recommending the broadcast camera or another one?)

The only difference between the ATEM Mini Extreme and the ATEM Mini Extreme ISO is that the ISO model adds simultaneous recording for all 8 independent inputs. ISO, short for isolated, recording is the process of recording all the cameras/sources along with the main program feed so you can go back later and edit them or make corrections with any mistakes made during live switching.

SDI, almost always. However, it depends on the situation. Since you will be using an ATEM Mini model with only HDMI inputs then sometimes it makes sense to keep everything native HDMI. If you need to run cable longer than 5m / 15' then I would recommend using a fiber optic HDMI cable or converting to SDI.
If you want to use SDI with the Blackmagic Design Studio Camera 4Ks and an ATEM Mini, I suggest using the Blackmagic Design Micro Converter BiDirectional SDI/HDMI 3G (referral) so you can maintain camera control and tally from the ATEM to the cameras.

What do you need a CFast card for? The Studio Cameras and ATEM Mini Extreme can only record to external USB-C hard drives.
